Scotland imports almost as much venison as it exports, but with increasing popularity of this healthy meat across the UK, and with a shortfall in available product, some believe that venison farming, now more than ever, offers a realistic option for Scotland's farmers looking to diversify.
Christian Nissen of Highland Game, the Dundee-based game dealer that last month bought out the UK's largest processor, said: "To meet my contracts right now I need a further 15,000 carcases. Currently I have to import these from New Zealand because that raw product is simply not available in Scotland. We are really starting to see the UK venison market take off, but we are going to create a vacuum in supply that can only be met by greater imports.
