What do you do when you inherit Gordon Ramsay's kitchen? Do you try to emulate the style of the Michelin-starred celebrity chef or try something completely different? The answer, according to its new occupant, is to ditch the past and look forward.

"Nobody can copy what Gordon does," says Chris Draper, head chef at Room, the restaurant that replaces Gordon's Amaryllis at Glasgow's renowned One Devonshire Gardens hotel next month. "We're not in the fine dining arena. We are much more relaxed and accessible - and our style has a sense of humour."
